Description

OVERALL OBJECTIVES:
Prepare, Produce and provide quality service in all areas of Pastry production for menu items and specials in the designated outlets in accordance with standards and plating specifications.

KEY TASKS:
1) Comply with and fully understand the laws and regulations regarding licensing, food safety, health & safety, fire equipment and fire training
2) Maintain a high level of motivations and team spirit
3) Follow portion controlled recipes and garnish requirements as instructed
4) To liaise with all kitchen staff within the area to ensure a correct and professional operation is conducted within all outlets
5) To ensure that all perishable items are stored quickly and efficiently thus avoiding unnecessary quantities being held within the kitchen areas, always ensuring complete utilization of all items with minimal wastage

6) Enforce high standards of hygiene and sanitation.

7) To adhere to the strict policies regarding personal grooming and hygiene
8) Ensure at the end of the working day that all areas are fully cleaned down
9) Ensure all accidents are reported to a senior team member
10) Ensure all advanced food prep is completed conforming to set standards and recipes
11) Attend all briefings and meetings as required
12) Immediately inform a senior member of the team if any equipment is damaged or faulty.
13) Be aware of new menus and daily specials
14) Label, date and rotate items stored in all kitchens
15) Supervise junior members of the team during mise-en place and service
16) Do all necessary cleaning duties and contribute to the overall cleanliness of the Kitchen at all times (all sections)
17) Attend all meetings that are required by the chef
18) Ensure that all desserts and product are consistent
19) Communicate effectively to pastry team in regards to inventory, product pars, and production levels
